Salad of the Goddess

Ingredients

·        One large bunch of fresh dandelion greens, cleaned and dried


·        One half bunch of Romaine lettuce


·        Two small apples, cut into ¼ inch sections, married with lime juice


·        One large beefsteak tomato


·        One half large white onion


·        One whole bunch fresh mint, chopped


·        Extra lime juice


·        One pinch dried basil


·        One pinch dried oregano


·        One cup soft tofu, cut into one and a half inch cubes, sliced again in the center and marinated for one hour in the fridge, with                        balsamic vinegar, and one inch of ginger root smashed.  


·        ¼ cup lightly toasted almonds, pecans, walnuts or pine nuts


·        3 Tablespoon EVOO


·        Black pepper to taste


·        Parmesan cheese to taste


Directions

First, toss dandelions, Romaine lettuce, apples, tomato, onion, mint in large salad bowl.  Mix in EVOO and lime juice.  Sprinkle in basil and oregano.  Mix thoroughly.  Plate.  Add nuts or salmon as a garnish.  Add black pepper and parmesan cheese to taste.  Remember to take the dandelion leaves before they flower.  Wash well, but they’re totally edible, like orchid flowers.

ECO KUDOS

With both acknowledged and possible calamities as compelling and urgent
catalysts, Raincoast Conservation is advocating for British Columbia's first fully protected salmon runs. The move is an effort to save the grizzly bear species.

This bold and ambitious proposal runs contrary to the historical underpinnings of salmon management, as fisheries managers have always assumed that salmon exist exclusively for human consumption.

According to Raincoast, it is a matter of competition, and the odds are stacked against carnivores in these coastal salmon forests.

I've seen this. It's quite disturbing. It reminds me so much of Bear Baiting. I feel the same way about fur-trappers. They catch the animal using a horrible leg-hold trap or snare... and then when they see that they've caught it, they club it over...
